Project undertaken through a Collaborative Agreement with the CIFOR-INIA. We have studied the composition of the oak wood planks of the barrels used at Pago de Carraovejas, in terms of both the aromatic fraction and the tannins and other compounds originated during the toasting process.
The study includes evaluating barrels made from Spanish oak and their aptitude as ageing medium for quality wines. The results point to good aptitude and the potential use of Spanish Oak in the oak barrel making industry.
